If you are quick you can grab yourself one of the lemon and coconut muffins that have just come out of the oven. They smell divine. I did make a couple of adjustments to the recipe like cutting the amount of sugar down by 2/3's and substituting greek yogurt for the butter. Delicious.
Now that we have eaten time to organise some fabrics for another couple of Christmas tablerunners for the hospital stall.

ooh those muffins do sound very good.... I also cut down sugar with baking but am not confident replacing the butter.... would you use equal quantities of the yoghurt?

Lemon & coconut muffins sound delicious. I may have to give that combo a go today. We've been doing so much extra cooking and baking during this lockdown. The kids love to help in the kitchen (even though they're teenagers) so it's been a good way to spend time together.
