A favourite meal of ours (Day 3 post)

Last night's dinner is a favourite of both hubs and myself.    I particularly like it as it is relatively quick to prepare and best of all it is cooked in one pan.    At this stage I must warn you that there is an original recipe of this dish somewhere but I am one of those cooks who substitutes, adds to and deletes according to our tastes and dietary needs.   So here goes.    Stir fry the veggies - in this case carrot, onion and bok choy -  capsicum or celery have also been used  in the past depending on what is in the vegetable crisper at the time of cooking.    Once they are starting to soften add in approx. 1 1/2 cups of chicken stock and allow to simmer for approx. 15 min.    Then take your spaghetti stick - if you have one or just wing it.

Measure out enough for two serves, break lengths into thirds and add into the pan with the veggies and stock giving it a good stir.   Let this cook for another 15/20mins until spaghetti is just about cooked and most of the stock is reduced.    Take some shredded cooked chicken -  usually I use BBQ chicken - a cup of raw peanuts and stir through the pan thoroughly.     Once this is done add in some lemon juice - amount depends on your taste - and some chopped parsley.   Again stirring thoroughly,  heat through and this is what you end up with.


Serve into bowls and enjoy.
